Milk proteins could adsorb to tooth enamel surfaces selectively and form an acquired protein pellicle, which is closely related to tooth demineralization and remineralization. Studying the influence of milk protein pellicles on demineralization and remineralization of tooth surface can further ensure the mechanisms of protection against dental caries of milk. This article has reviewed the formation and composition of milk protein pellicles, including casein, whey protein, minerals and proteose- peptones. The effect of these agents on tooth demineralization and remineralization has also been discussed.
